         drinking gongfu (kung fu) tea

the people of guangzhou enjoy drinking gongfu tea at leisure time. drinking gongfu tea was very popular in chaoshan area and now it is widespread in guangzhou city. gongfu tea is very particular at tea set, tea leaves, the quality of eater, infusion of tea., serving, and the way of drinking. the teapot is as small as a fist. the pot is transparent and you can almost see the tea leaves in distinctly. the teacup is only half of a table tennis ball. wulong tea is best for gongfu tea. the tealeaves should be filled the pot to the brim and be pressed hard with fingers. it is said that the harder the tealeaves pressed the more savory the tea will be. the water for gongfu tea should be precipitated first or be mineral water. when making tea, pour the water into the kettle as soon as the water for the first or even second time. new water should be added before the pt is empty otherwise the tea will become lighter and lighter. people usually chat with each other while drinking tea. this is called gongfu tea.
